Salmon Tartare

Avocado Emulsion ,Quail Egg ,French Baguette.

Salmon tartare is best appetiser for summer , for this recipe need to select fresh or sushi grade salmon .

Ingrediants -

  • 120g -fresh salmon

  • 20g-capers

  • 20g-gherkins

  • 3g-parsley

  • 1wedge-lemon

  • salt pepper to taste

  • 1 - slice French Baguette

  • 1- Quail Egg

Avocado emulsion

  • 1-avocado

  • 20g-olive oil

  • 2g salt

  • 15g egg yolk

  • 10g lemon juice

method-

This is one of very easy recipe , first cut the salmon in to the small diced and fine chopped all caper and gherkins , parsley as well . Mix all together then add seasoning and squeeze lemon on it .

Arrange the mixture on top of the baguette then put egg yolk on top of the meat . Drop avocado emulsion on the side of bread.

For avocado emulsion-Mix all ingredients together and blend . Check the seasoning and serve.

Tuna Sashimi

Japanese Cucumber, Scallion , Fried Shallot ,sesame seed , ponzu .

ponzu recipe -

  • 2 tablespoon mirin

  • 4 tablespoons sake

  • 6 tablespoons yuzu juice

  • 1/2 cup soy sauce

  • 4 tablespoons Japanese rice vinegar

  • 2 piece kombu

Tuna on Cucumber Base

Light, fresh, and bursting with umami.

# Ingredients:

100g AAA-grade tuna

2 slices cucumber (1/4-inch thick, for base)

5g green onion (thinly sliced, whites & greens)

2g toasted sesame seeds

4g crispy fried shallots

1 tbsp ponzu sauce

# Method:

1. Prepare the Tuna:

Chill the tuna for 20 mins.

Use the torch and fire the outer side of tuna then thinly sliced

2. Season & Mix:

Gently fold tuna with ponzu sauce (add gradually to taste).

Add green onion (reserve some for garnish).

3. Assemble:

Place cucumber slices on a chilled plate.

Arrange on top (lightly press to adhere).

4. Garnish:

Sprinkle with sesame seeds, fried shallots, and remaining green onion.

# Serving Suggestion:

Pairing: Serve with extra ponzu or a dab of wasabi for heat.

Texture Contrast: Add a sprinkle of crunchy tempura flakes (optional).

This dish balances rich tuna, crisp cucumber, and savory-sweet ponzu, with aromatic shallots and sesame for depth. Perfect as an appetizer or light course in a multi-dish meal.
