Salmon Tartare

Avocado Emulsion ,Quail Egg ,French Baguette.

Salmon tartare is best appetiser for summer , for this recipe need to select fresh or sushi grade salmon .

Ingrediants -

  • 120g -fresh salmon

  • 20g-capers

  • 20g-gherkins

  • 3g-parsley

  • 1wedge-lemon

  • salt pepper to taste

  • 1 - slice French Baguette

  • 1- Quail Egg

Avocado emulsion

  • 1-avocado

  • 20g-olive oil

  • 2g salt

  • 15g egg yolk

  • 10g lemon juice

method-

This is one of very easy recipe , first cut the salmon in to the small diced and fine chopped all caper and gherkins , parsley as well . Mix all together then add seasoning and squeeze lemon on it .

Arrange the mixture on top of the baguette then put egg yolk on top of the meat . Drop avocado emulsion on the side of bread.

For avocado emulsion-Mix all ingredients together and blend . Check the seasoning and serve.

Tuna Sashimi

Japanese Cucumber, Scallion , Fried Shallot ,sesame seed , ponzu .

ingredients-

  • 100g AAA grade tuna

  • 2 - slice cucumber (for Base )

  • 5g-green onion

  • 2g- sesame seed

  • 4g- fried shallot

  • 1 tbsp- ponzu

ponzu recipe -

  • 2 tablespoon mirin

  • 4 tablespoons sake

  • 6 tablespoons yuzu juice

  • 1/2 cup soy sauce

  • 4 tablespoons Japanese rice vinegar

  • 2 piece kombu

Method-

  1. In a small pan simmer the mirin and sake for a minute, remove from heat and cool to room temperature.

  2. Combine the yuzu juice, soy sauce, vinegar, kombu

  3. Strain through a fine strainer .

  4. Refrigerate for up to 2-3 weeks.
