# Ingredients (serves 2)
• 2 Cumberland sausages (or any high-quality pork sausage)
• 1 ciabatta roll (or 2 small ones), sliced in half
• 1 cup broccoli florets
• 1 cup asparagus, trimmed and cut into 2-inch pieces
• 2 cloves garlic, minced
• 2 tbsp olive oil (divided)
• 1 tbsp butter (optional, for richness)
• Salt & black pepper, to taste
• 1/2 tsp red pepper flakes (optional, for heat)
• 4 oz fresh mozzarella, sliced
• 1 tsp balsamic glaze (optional, for drizzling)
• Fresh basil or parsley (for garnish)
# Instructions
1. Cook the Sausages:
• Heat 1 tbsp olive oil in a skillet over medium heat.
• Add the sausages and cook for 12-15 minutes, turning occasionally, until browned and cooked through.
• Remove from the pan and set aside.
2. Sauté the Vegetables:
• In the same pan, add the remaining 1 tbsp olive oil and butter (if using).
• Add broccoli and asparagus, sautéing for 3-4 minutes until slightly tender.
• Add minced garlic, salt, pepper, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant. Remove from heat.
3. Toast the Ciabatta:
• Lightly toast the ciabatta halves in a toaster, grill pan, or under the broiler until golden.
4. Assemble the Sandwich:
• Place a layer of fresh mozzarella on the bottom half of the ciabatta.
• Add the cooked Cumberland sausage (whole or sliced).
• Top with the garlicky broccoli & asparagus sauté.
• Drizzle with balsamic glaze (if desired) and sprinkle with fresh herbs.
• Close with the top half of the ciabatta.
5. Serve & Enjoy!
• Cut in half and serve warm. Great with a side salad or extra roasted veggies.
