Wheel sausage sandwich

# Ingredients (serves 2)

2 Cumberland sausages (or any high-quality pork sausage)

1 ciabatta roll (or 2 small ones), sliced in half

1 cup broccoli florets

1 cup asparagus, trimmed and cut into 2-inch pieces

2 cloves garlic, minced

2 tbsp olive oil (divided)

1 tbsp butter (optional, for richness)

Salt & black pepper, to taste

1/2 tsp red pepper flakes (optional, for heat)

4 oz fresh mozzarella, sliced

1 tsp balsamic glaze (optional, for drizzling)

Fresh basil or parsley (for garnish)

# Instructions

1. Cook the Sausages:

Heat 1 tbsp olive oil in a skillet over medium heat.

Add the sausages and cook for 12-15 minutes, turning occasionally, until browned and cooked through.

Remove from the pan and set aside.

2. Sauté the Vegetables:

In the same pan, add the remaining 1 tbsp olive oil and butter (if using).

Add broccoli and asparagus, sautéing for 3-4 minutes until slightly tender.

Add minced garlic, salt, pepper, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant. Remove from heat.

3. Toast the Ciabatta:

Lightly toast the ciabatta halves in a toaster, grill pan, or under the broiler until golden.

4. Assemble the Sandwich:

Place a layer of fresh mozzarella on the bottom half of the ciabatta.

Add the cooked Cumberland sausage (whole or sliced).

Top with the garlicky broccoli & asparagus sauté.

Drizzle with balsamic glaze (if desired) and sprinkle with fresh herbs.

Close with the top half of the ciabatta.

5. Serve & Enjoy!

Cut in half and serve warm. Great with a side salad or extra roasted veggies.
